Salt, Pepper, Apple and Egg
APPLE COFFEE CAKE

4 cups thin sliced apples
2 cups sugar
2 cups flour
1 1/2 teaspoon soda
1 teaspoon cinnamon
1 teaspoon salt
1/2 cup chopped nuts (optional)
1/2 cup raisins (optional)
2 eggs
1/2 teaspoon vanilla
3/4 cup oil
Pour sugar over apples and let stand 30 minutes.
Add dry ingredients to apple mixture.
Add remaining ingredients.
Mix by hand until smooth.
Use a greased 13X9 pan or two 8 or 9 inch pans.
Bake at 350 for 45-60 minutes.
